I shouldn’t really have to post warnings on a food blog. Read no further if you just had dinner or have a weak stomach. You have been warned.

This must be one of those foods that belong on those Foodie Challenge quizzes. You are a consummate foodie if you can eat this. Below is how my friend introduces me to this savoury delight.  I might go down to Springbank Cheese to have a look. Window shopping only.

It’s that time of year again, time for the Calgary Stampede.  Hubby and I went to the grounds on Friday to take in the evening show and the food.  Since it was raining, I didn’t take any pictures of the food. I decided on a Thai chili lime noodle box. I don’t come to Stampede to eat healthy food, but I thought I’d give it a try. The noodles were drowning in sauce.  If it had less sauce, it would have been good. Hubby had a donair, he didn’t have much to say about it. For dessert we tried the chocolate covered bacon which was surprisingly good. The deep fried cheesecake was interesting in its own way. I suppose I would have tried the deep fried butter if I actually found it. Our our way to the show after dinner, we saw the food trucks. We would have preferred to have had dinner there instead. Oh well.

There’s going to be all sorts of Stampede breakfasts this week, but none so far fit my schedule. So I made my own.

Death by Black Forest Trifle

Office potluck lunch. Yeah sometimes I throw it all out the window. This is one of the most processed, unhealthy things I’ve eaten.   Thank goodness I had other people to consume it. Apparently, it’s bowl licking good.

Death By Chocolate Trifle

9×9”  baked chocolate cake (devil’s food), cut in small pieces (Duncan Hines needs 3 eggs)

Cool Whip, large container (works better than store brand) plus extra

2 pkgs prepared Oetker chocolate mousse

Skor bars, frozen and broken up, or ½ pkg Skor bits and Callebault chocolate, broken up

Generous handful  Callebault chocolate shavings for garnish

  1. Place in layers in large glass bowl or trifle dish:
    1. Chocolate cake
    2. Chocolate mousse
    3. Skor bars or Skor bits and chocolate
    4. Cool Whip
  2. Repeat layers until bowl is full (2 layers)
  3. Garnish top layer with chocolate shavings
  4. Chill until served.

Black Forest Variation

Add cherry pie filling after the chocolate cake layer but before the Cool Whip

Pizza Buns and Peanut Butter Cream Pie

I’m going on a ski trip tomorrow, so I was thinking about going to the Chinese bakery to pick up some bao. Scratch that. Let’s have a Chinese Italian fusion bao. Pizza buns.  Gigantic ones. Well, I had some problems with portioning the dough so one came out a little small. Great for sampling. Oh I ran out of tomato paste and improvised a second batch with ketchup instead.

I still have that leftover pie crust from last week.  I got bored of coconut cream so I tried making a peanut butter cream pie.  I substituted the regular crust for the peanut butter graham cracker crust.  Still need to work on my crust technique, but this one fell apart less than the previous one.  I used all natural peanut butter, nothing but peanuts.  It gives a less sweet taste to the filling which I like. I love my new Zwilling saucepan. It holds the heat perfectly for the chocolate ganache. Dessert anyone?

Yee Haw!! Stampede Food

I usually avoid most Calgary Stampede activities.  But it is their centennial… and of course there’s the food.  So I made a trip down to the grounds to sample some of the delights. As an avid foodie, I have to try everything, right?

The winner was definitely Naaco Bites from the Naaco Truck. It was voted best new midway food of the Stampede. Naaco also uses locally produced, organic and/or sustainable foods.

Blast from the recent past

I had a craving for a Priazzo one day. Unfortunately, Pizza Hut doesn’t make them anymore. So I Googled it and came up with a reasonable facsimile.

Introducing the Epic pizza pie! Used dough and topping for three regular size pizzas. Double crust. Stuffed with spicy Italian sausage, Mennonite ham sausage, red onion, green pepper and a five cheese blend.Circa 1985.
